One major topic left to cover before your changeover day: how to train all those staff? And how to make sure their user accounts are set up and ready to go?

Training staff is a huge component of any new system, be it technological or not. You wouldn't expect to start a new Housing First program tomorrow and expect it to go well without making sure your staff know what they're doing first!
